Our "production" cycle...
First, we need to put together our Freezer Beef group - this takes a whole year!: We start calving in February, completing that cycle by end of April. When weather permits, Moms and babes are sent out to grass for the remainder of the grass season. We supplement the calves diet with a free-choice forage/grain pellet to support their growth - its supporting skeletal structure rather than the production of meat/fat. In late October, all calves are weaned, and sorted into one of three groups: Auction Calves, Heifer replacement program or our Freezer Beef program. All these calves have been raised on momma's milk and spring/summer/fall grasses of that year. For those that stay with us, we continue to supplement their diet to support their growth, in addition to providing free choice hay. Remember despite what the A&W commercial says, there is no grass in the winter in Ontario - so ranch baled hay and our supplement grows them up through the winter! The next spring, we start the selection of the best candidates for each delivery availability: by age and size. Realize, in the meantime, we are calving and growing-up the next year's freezer beef crop! and on it goes!!!
There are three times a year when you can receive your PVR Beef:
May Delivery is our Ranch Recipe Fed 'n' Finished early Spring Offering. At the end of April, we select the oldest and biggest beasts from the group to be processed for May delivery. Because of the time of month and year they are being processed, they get no time out on spring grass. The snow doesn't melt until the beginning of April and grass is not ready for turn-out until the middle of May. But don't forget, this group likely had the longest time on momma/grass the previous year as they are the eldest of our group.
We need your intention (deposit) to order beef on or before February 1st so we know how many yearlings to keep for our Ranch Recipe program over the winter. Your order will be processed in late April with delivery slated for mid-May.

August Delivery is our Grass Fed ‘n’ Finished Summer Offering. In late July, we select the oldest and biggest beasts from the group that we have to be processed for August delivery. This group will have been out to grass from say, May 15 until the first week of August. They have had the benefit of both the spring and summer changes to the grass composition. We supplement their diet with our pelleted forage as the nutritional content of the grass cannot sustain them alone.

October Delivery is our Grass Fed ‘n’ Finished Fall Offering. We take the remaining beasts we have to be processed for October delivery. This group will have been out to grass from say, May 15 until the first week of October. They have had the benefit of three seasons of changes to the grass composition - there is a huge difference between spring grass and fall grass. We continue to supplement a free-choice pellet to support their growth.

Alongside the timings described above, weather dictates the growth of everything! If it's a wet year the grass will have a different impact than a drought year on the freezer group as a whole. Not only that, it will have an impact on the seed bank and what will grow more abundantly for that year - for instance 2021 started droughty and turned into a wet year with an abundance of clover. I can almost guarantee, next year will not be the same! All I am trying to say is what our yearlings have to eat impacts their finish. We use consistent genetics, while working with Mother Nature who adds her own spin to the mix to influence the flavour of your steak.
Considering we now have three order offerings…Perhaps the way to go is to order a Split for Spring/Summer BBQ season with your custom cutting instructions focused on Steaks and our handy Burger Patties; and then later a Split for Fall/Winter Stew & Roast season with your custom cutting instructions focused on Roasts, stewing beef, stir fry and burger….
