Cost and Weight

Our beef costs $5.75/lb based on the "Hanging Weight" of the carcass.  This price includes processing, custom cutting, wrapping and flash freezing.   So, in general:

• SIDE weighs in at approximately 250 - 300 lbs ($1,437.50 - $1,725)
• SPLIT weighs in at approximately 125 - 150 lbs ($718.75 - $862.50)

When the butcher proceeds to process your order, the amount/weight of beef that then goes into your freezer depends on your cutting instructions.  i.e. the less bone-in cuts you take, the less weight your final order will be!  This does not mean less meat - just less bones!  Generally, expect a 15-20% loss from your original weight.  For more information on Weights check out our Beef Information Blog
